The faces are the whole trick. Underneath it’s teriyaki quinoa in a bell pepper — a dinner most kids have turned down before — but carve a jack-o’-lantern into the front and it stops being a vegetable and starts being a Halloween thing.
The filling is quinoa, scrambled egg and mixed vegetables in a coconut aminos teriyaki, so it’s an actual dinner rather than a side.
Carve the faces before you boil the peppers, not after. Five minutes in boiling water softens them enough to eat while they can still stand up on the plate.

Teriyaki Quinoa Rice
1 cup quinoa, rinsed
Avocado oil
½ onion, chopped
1 cup frozen organic mixed vegetables
2 eggs, scrambled
Sauce
6 tbsp coco aminos teriyaki sauce
1 ½ tsp sesame oil
1 tsp rice wine vinegar
Salt and pepper, to taste

Bring a large pot of water to boil. While waiting for the water to boil, rinse peppers, slice off tops, scoop out the seeds from the inside, and use a paring knife to carve out "jack-o'-lantern" faces.

Once water is boiling, put the peppers in and cook for 5 minutes until peppers are soft. Remove from water to cool.

In a saucepan, cook quinoa according to package directions.

In a separate wok, heat up oil and saute onions until caramelized.

Stir in frozen mixed vegetables, and heat until cooked through.

Mix in eggs and cook until scrambled.

Add in drained quinoa until all ingredients are evenly distributed.

In a separate bowl, whisk together all sauce ingredients, and mix into the quinoa to evenly coat.
