¼cupseasoned breadcrumbsIf gluten-free, can replace with almond flour
¼tspsalt for sprinkling on zucchini to get rid of moisture

Preheat oven to 450F. Place a wire rack over a baking sheet and spray with avocado oil (using a wire rack will help keep the rounds crispy rather than soggy).

Slice the zucchini into 1/4" thick circles and sprinkle with salt. After 20 minutes, place the zucchini between paper towels and blot to get rid of excess moisture. In a bowl, toss the zucchini with the tbsp of avocado oil.

In a separate bowl, combine the cheese and breadcrumbs.

Dip each zucchini round in the breadcrumbs mixture, making sure each side is coated. Place each round on the wire rack. Bake for 25-30 minutes or until the rounds are crisp. Enjoy!
