Hummus chicken is a one-pan dinner that takes about five minutes of actual work: season bite-size chicken, spread a thin layer of hummus over it, lay it on a bed of broccoli and roast at 450F for thirty minutes. The hummus does two jobs — it seasons the chicken and it keeps it from drying out at that heat, so you get the browning without the chewiness. Cut small, the pieces are a good size for a toddler.

Preheat oven to 450F. In a large Pyrex, lay down your broccoli florets and drizzle with avocado oil, salt, and pepper. Toss to evenly coat.
Cut your raw chicken into bite size chunks. Season with salt, pepper, paprika, garlic powder, and onion powder. Rub mixture into chicken so it's completely coated.
Spread a thin layer of hummus over the chicken and lay them down over the broccoli florets. Drizzle chicken and broccoli with lemon juice.
Bake for 30 minutes or until the chicken is cooked through. Enjoy!
