These breakfast cookies are nutritious enough for breakfast, yet taste like dessert! Made with wholesome sprouted oats, potassium-rich bananas, creamy peanut butter that's high in protein, and naturally sweet pure maple syrup, these cookies have easy, clean ingredients and come together in about 20 minutes! Vegan + gluten-free!
2 ripe bananas, mashed
⅓ cup raisins
⅓ cup natural peanut butter
¼ cup pure maple syrup
¼ cup chocolate chips/ chocolate candy coated gems
2 tbsp liquid coconut oil
1 tsp vanilla extract
Thick flaky sea salt, to taste

Preheat oven to 325F.

Combine all ingredients in a large bowl (except for sea salt), and mix well.

Form into flat, round cookies and place on parchment lined baking sheet.

Sprinkle with sea salt.

Bake for 15 minutes. If you want a crispier cookie, turn the heat up to 350F and bake for another 5-10 minutes, watching closely that the cookies don't burn.

Let cookies cool for 5 minutes and enjoy!
