Chocolate Chip Peanut Butter Blondies

Want in on a little secret?? 😏 These protein blondies are made with CHICKPEAS! A favorite of both my 7&4 year olds, these addictive gooey blondies taste DELISH and are also packed with plant-based protein, are grain free, and vegan.

 1 (15-oz) can chickpeas, rinsed and drained
 ½ cup natural peanut butterMake sure there's no sugar added
 ½ cup pure maple syrup
 ½ cup dark chocolate chips (plus extra to optionally sprinkle on top)
 ¼ cup almond flour
 1 tbsp liquid coconut oil
 2 tsp vanilla extract
 ½ tsp sea salt (plus extra to sprinkle on top)
 ¼ tsp baking soda
 ¼ tsp baking powder

Preheat oven to 350F.

In a food processor, blend together all the ingredients except the chocolate chips.

Stir in chocolate chips and mix with a big spoon.

Grease a silicone 8x8 baking dish and pour batter in, sprinkling extra sea salt and chips if desired.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
