Did you know that spaghetti squash is high in vitamins and antioxidants? This cheesy spaghetti squash casserole is extremely kid-friendly and has a similar creamy feel to mac n cheese but the noodles are replaced with a vegetable! If you want to give it a baked ziti feel, add some marinara sauce! A fun way to try a new vegetable with the kids.
1cupshredded Italian cheeseThe brand we use has a mix with organic provolone, organic mozzarella, and organic sharp cheddar
½cupricotta cheeseCan also substitute with low fat cream cheese or even Greek yogurt, but each will produce its own unique flavor

1tspsalt, plus extra to sprinkle on the squash before cooking

Optional: if you want to make it taste more like a Baked ziti dish, add some marinara sauce to the sauce.
Avocado oil cooking spray

Preheat oven to 400F. Cut squash lengthwise and scoop out seeds. Brush the inside of both halves with avocado oil. Season with salt and pepper.

Place the 2 halves cut side down in a Pyrex with about 1 in of water (covering the bottom of the spaghetti squash).

Roast the squash until tender, about 45 min-1 hour. Allow several minutes to cool.

Using a fork, scrape the insides of the squash to create a spaghetti-like texture.

Lightly spray a casserole dish with avocado oil cooking spray to coat.

In a large bowl, combine the cheeses, egg, and 1 tsp salt. Add the spaghetti squash and mix well. Transfer the mixture to the prepared baking dish. Bake until the cheese is golden, about 25 minutes. Enjoy!
