The perfect side dish that's so simple to make, yet produces such mouth-watering flavor. Roasted potatoes, caramelized onions, and aromatic dill come together to create a dish that's loaded with fiber, B-vitamins, iron, and potassium.
½cupfresh dill, washed and chopped fine, half reserved
¾tspavocado oil per potato, plus more to coat the bottom of the pan, and 1 tbsp for sautéing onions

Preheat oven to 450F. Grease your baking tray with olive oil.

In a medium sized skillet, add 1 tbsp avocado oil and sauté onions until golden. Add in the garlic and sauté together until fragrant. Set aside.

In a large pot, bring water to a boil. Add in potatoes (and a sprinkle of salt) and cook 15-20 min. Drain water. Pat the potatoes dry.

Once cooled off, take each potato and line them on the baking sheet. Use a potato masher or the bottom of a glass/hard cup to smash each potato, or slice each potato so they're thin enough to crisp.

Drizzle avocado oil over each potato and onion slice and season with salt, garlic powder, pepper, and 1/4 cup dill.

Bake for 20 minutes. Flip the potatoes, and bake for another 20 minutes. When out of the oven, sprinkle the sliced onion/garlic mixture around the potatoes with extra sea salt and 1/4 cup fresh dill. Enjoy!
