Last night’s dinner is the most underused lunchbox ingredient in the house. This one starts with a vegan stuffed pepper left over from dinner, which travels better cold than it has any right to.
Around it: whole wheat crackers with hummus, caprese skewers made from cherry tomatoes, basil and mozzarella pearls, and strawberries. The skewers work without the mozzarella if you’re keeping it dairy-free.
Thread the skewers the night before and stand them upright in the box. Laid flat they roll, and the tomatoes end up in the hummus.
