Yogurt-Frosted Watermelon “Cake”

This sweet + refreshing no-bake watermelon "cake" is a fun new take on a summery dessert. Frosted with a a tangy + sweet yogurt topping and covered in berries, this dessert is pleasing to even the pickiest of eaters (aka my toddler son!). We've served this for birthdays, the Fourth of July, and Memorial Day Weekend. Dress it up with any colored sprinkles you want (we use natural dye-free ones) and make it match the theme you want for any occasion!

 1 small seedless watermelon (we used a baby one but larger works as well)
 2 cups lowfat or full-fat Greek yogurt (for non-dairy, we've tried coconut milk yogurt and it came out great)
 2 tbsp pure maple syrup
 1 tsp vanilla extract
 Strawberries, cut into slices
 Blueberries
 Dye-free natural sprinkles

Cut your watermelon into the shape of a cake by slicing the top and bottom off. Standing upright, cut away the rind to make a cylinder shape. Place the watermelon on your serving plate.

Lightly blot the watermelon with a paper towel to remove extra moisture before adding the yogurt "frosting".

In a small bowl, combine the yogurt, maple syrup, and vanilla extract. Mix well.

Cover your watermelon with your yogurt "frosting" by using a rubber spatula.

Decorate with sprinkles, blueberries, and strawberries. Enjoy!
