Watermelon Pops

Summer is almost here and we’re rounding up our favorite warm weather recipes. We leveled up out refreshing watermelon with Memorial Day/Fourth of July vibes. My kids find every food is more fun on a pop stick and I love that their hands stay mess free.

Utensils Used
 Wooden popsicle sticks
Ingredients
 1 small watermelon
 ½ cup white chocolate chips, melted
 Red dye-free plant-based food dye
 Blue dye-free plant-based food dye
 Handful of blueberries
 Red dye-free plant-based sprinkles
 Blue dye-free plant-based sprinkles
 Handful of pumpkin seeds
 Handful of dried cranberries or a dried date, broken into small piecesCan also sprinkle with dried nuts or granola

On a cutting board, slice the watermelon in half. Take one half and slice a 1/2 inch - 1 inch circle all around to make a flat piece of watermelon. Cut this in half both ways so you have 4 even triangles. Cut a little slice in the bottom and slide in a popsicle stick.
