Tres leches cake is a sponge cake soaked in three milks — whole milk, sweetened condensed and evaporated — and it is the most forgiving celebration cake I know, because the soaking is the whole point. The cake is sweetened with coconut sugar rather than white, and it takes five eggs, which is what gives it enough structure to drink all that liquid without collapsing. Pierce it all over with a fork the moment it comes out of the oven, then let it cool before the milks go on.

Preheat oven to 350 degrees F. Grease and flour a 9x13 inch baking pan.
Sift flour and baking powder together in a small bowl
Mix butter and 1/2 cup sugar together in a mixer and gradually add in eggs and 1/2 tsp vanilla extract until well combined
Add the flour/baking powder mixture to the mixer until well combined and pour into pan
Bake for 30 minutes and upon taking the cake out of the oven, pierce cake several times with a fork.
Combine all 3 milks together and pour over the cooled cake
Blend whipping cream, 1/2 cup of sugar, and 1 tsp vanilla together before spreading over top of the cake.
Garnish with cinnamon to your liking
