S’mores Banana Bread

Products We Used
 Masher (for the bananas)
 Silicone loaf pan
Dry Ingredients
 2 cups almond flour (can also use oat flour but will produce a denser result)
 1 tsp baking soda
 ¾ tsp baking powder
 ½ tsp salt
 2 tsp cinnamon
 ½ cup chocolate chips
Wet Ingredients
 2 large bananas, mashed
 ½ cup organic yogurt (if dairy, we use Greek yogurt... if dairy-free, we use coconut yogurt)
 ¼ cup coconut oil
 ½ cup maple syrup
 1 tsp vanilla extract
 ½ cup cashew butter
S'mores Topping
 ½ cup chocolate chips
 4 graham crackers, crumbled
 1 cup mini vegan marshmallows
*Note
 Because this banana bread contains no eggs, the middle of the banana bread will sink in once cooled. To prevent that, you can either substitute the almond flour for oat flour and add 2 tbsp ground flaxseed (which will produce a denser banana bread) or you can experiment by adding 3 eggs to the batter (but then it will not remain vegan).

Preheat oven to 350F. Grease a 9x5 silicone loaf pan with coconut oil.

Combine all dry ingredients in a large bowl.

In a separate bowl. whisk together all wet ingredients.

Pour wet ingredients into dry ingredients, and stir to combine.

Pour batter into prepared pan, adding the s'mores toppings on top.

Bake around 40 minutes, keeping an eye on it so the banana bread doesn't burn. Enjoy!
