St. Paddy's Day

Rainbow Apple RingsWe love eating the rainbow so we decided to put a St. Paddy’s Day spin on our apple slice “donuts”. Topped with Greek yogurt and our rainbow fruit, you can also sub in nut butter or chocolate hummus for the spread. We then added some dye-free candy in the center for our pot of gold at the end of the rainbow.
Shamrock ShakeA kid-friendly spin on the classic St. Paddy's Day shamrock shake, we use kale + spinach to naturally color our smoothie green. Our version tastes like a banana milkshake and is naturally sweetened by dates!
Banana Spinach MuffinsWe made these blender muffins in honor of St. Patrick’s Day! These chocolate chip banana muffins are always a hit with the kids and their friends (and no one even complains that the beautiful green color comes from SPINACH!!). We love using spinach because it adds such great nutritional value without compromising the sweet flavor of the muffin. Spinach is a such great source of fiber that helps fuel growth of healthy gut bacteria.
Shamrock Chocolate BarkLet’s make Shamrock Chocolate Bark in honor of St. Paddy’s Day! 🍀 All you need is white chocolate with some coconut oil so it spreads smoothly, pretzel twists (we used cauliflower pretzels), and dye-free green sprinkles on top. "Wherever you go, whatever you do, may the luck of the Irish be there with you!"
Pot of Gold Snack BoardReady for an easy St. Paddy’s Day snack board that’s perfect for entertaining or even a fun after school treat? My kids loved helping me assemble this rainbow fruit board with a delicious pot of snack gold at the end. They may have eaten half the fruit and organic corn puffs before they made it on the snack tray, but they were all giggles and happy bellies while doing it.
Green SmoothieAn easy way to get my littles to eat green veggies is by mixing them into smoothies. Great for breakfast or snacks, this green smoothie tastes like a banana shake and is naturally sweetened by dates. My son calls it dinosaur juice, and I'm happy to call it whatever he wants as long as I know he's getting his fill of nutrients!
