These chocolate chip banana muffins are always a hit with the kids and their friends (and no one even complains that the beautiful green color comes from SPINACH!!). We love using spinach because it adds such great nutritional value without compromising the sweet flavor of the muffin. Made with sprouted rolled oats, protein-rich natural peanut butter and sweetened by pure honey, these NO-BAKE bars will become your new favorite granola treats!Chocolate Chip Pumpkin MuffinsDid you know that you can replace flour with ALMOND BUTTER and it’ll create a moist, fluffy, delicious muffin?! 🤯. Zinc is important for many bodily functions such as strengthening your immune system (helping you fight a cold) + aiding in wound healing (for all those bruised knees).
🍃 These pancakes are made with clean simple ingredients like oats, spinach + bananas, and come together quickly in a blender. Not feelin that spinach?? Don’t worry! AMEN to that! Sawyer has a habit of coming downstairs for breakfast and asking for the most random foods. For a week straight, he only wanted turkey slices and cucumbers at 8am. This week, he only wants chocolate (my kinda guy!). These breakfast treats are a great compromise when my kids want sweets for breakfast, and I don’t feel like explaining why that’s not the best idea 😅😅
🍌 Made with nutritious gluten-free whole grain oats, sweetened naturally by fruit and pure maple syrup, and protein-rich from peanut butter, these donuts are great for meal prep as well as on-the-go snacks.Black Bean Lentil QuesadillasWith Cinco De Mayo coming up this week, I figured I’d share our favorite family-friendly Mexican inspired dishes!
🌱 These quesadillas are packed with THREE sources of plant based protein: black beans, lentils, and our favorite quinoa!
🧀 Such an easy way to change up the classic cheese quesadilla, these are hearty and delicious!
Salmon Veggie PattiesDo your kids eat fish? While Sawyer loves salmon, lately Liv has been hesitant to eat fish unless it’s made into a breaded patty (I find finger foods are always a hit with my kids). I also add caramelized onions and sweet red bell pepper for extra vitamins, potassium, and fiber!
💡 The great thing about this recipe is that we usually use leftover cooked salmon from earlier in the week. I love repurposing leftovers so no one gets bored eating the same foods throughout the week.
