Palm Tree Cupcakes

Even though we’re back from Hawaii, we’re still dreaming about those tropical Polynesian beaches. These cupcakes are so fun for a beach-themed party or just a fun snack activity. 🏝️ We used a gf cake-box mix to make our snack super quick and easy, then decorated with crushed graham crackers, organic fruit strips and gummies as well as our chocolate pretzel palm trees from a few posts back.

Cupcake Ingredients
 Clean gf cupcake mix (we use Simple Mills)
 Vanilla frosting (we like Miss Jones Baking Co)
 Graham crackers, crushed
 Fruit rolls, dye-free
 Fruit gummies, dye-free
Pretzel Palm Trees Ingredients
 Pretzel rods
 1 cup white chocolate
 ¼ cup milk chocolate
 1 tsp coconut oil, divided
 6 drops plant-based green food dye
 Raisins
 Green plant-based sprinkles

Line a baking sheet with parchment paper. Lay down pretzels with enough space between them to draw palm tree leaves.

Melt your milk chocolate and 1/2 tsp coconut oil together. Mix until smooth and drizzle on the pretzel sticks.

Melt your white chocolate and 1/2 tsp coconut oil together. Add your green food dye and mix until smooth. Using either a piping pen or spoon, spread the chocolate out on the top of the pretzels and shape as palm tree leaves. We found that thicker chocolate didn't melt quickly and stuck together stronger, so make each drizzle thick with chocolate.

Quickly add green sprinkles and raisins for coconuts. Freeze for 15+ minutes, and enjoy!

Cupcake Assembly

After making your cupcakes with a mix and letting them cool, smooth on your vanilla frosting.

Dip the frosted cupcake into the crushed graham crackers for your sand.

Cut your fruit strip into a small beach blanket and lay on the cupcake. Add a sour gummy (can use frosting to make it stick).

Take your chocolate pretzel palm trees and push it into the cupcake. Enjoy!
