Ombre Pitaya Chia Parfait

 Granola, for layering

Overnight Chia Pudding Layer
  cup chia seeds
 1 ½ cups almond milk
 2 tbsp pure maple syrup
 1 tsp pure vanilla extract
Light Pink Yogurt Layer
 ½ cup coconut yogurt or Greek yogurt
 1 tsp pure maple syrup
 Pink pitaya supercolor powder (mix until desired shade of pink is achieved)
Dark Pink/Lavender Smoothie Blend Layer
 1 ½ frozen bananas, chopped
 ½ cup frozen mango or pineapple
 ½ cup almond milk
 Pink pitaya supercolor powder (mix until desired shade of dark pink is achieved)

For the "Overnight Chia Pudding Layer", in a mason jar, add all ingredients and mix together. Seal and put in refrigerator overnight.

In a separate small bowl, mix together the ingredients for the "Light Pink Yogurt Layer".

The next day, in a blender, combine all the "Dark Pink/Lavender Smoothie Blend Layer" ingredients in a blender.

To assemble, take a glass or mason jar. First pour in your "Overnight Chia Pudding Layer". Cover with granola. Then add your "Light Pink Yogurt Layer". Cover with granola. Top with the "Dark Pink/Lavender Smoothie Blend Layer". Garnish with berries and enjoy immediately!
