Six ingredients come together for this super satisfying no-bake treat. Based off of Almond Butter Brown Rice Crispy Treats by @eatingbyelaine, we opted to make these in mini muffin trays because everything is more fun in bite-size (and they fit better in my kids' lunchboxes!)

In a large bowl, mix all the ingredients together except your chocolate. Spoon the mixture into silicone mini muffin trays.
In a small saucepan, melt your chocolate. Pour over your rice crispy mixture, sprinkle with sea salt, and freeze for 2 hours. Remove from tray, and enjoy!
