Kids’ Cauliflower Quinoa Tots

These veggie tots are an easy way to get my kids to eat a protein (quinoa) and vegetable (cauliflower) at the same time. While my son can be picky at times, I keep the spices minimal here so he can enjoy his tots without any fuss! Cheddar cheese adds calcium to the dish, too making it a great side dish or even main for kids + toddlers! Great for baby led weaning and school lunchboxes, these tots are vegetarian and can be made gluten-free. Another option for older kids who desire more spice is to mix them with whole wheat pasta, marinara sauce, and Parmesan cheese.

 ⅔ cup uncooked quinoa (makes about 2 cups cooked)
 1 (12 oz) package frozen riced cauliflower
 1 cup shredded cheddar cheese
 ½ cup seasoned breadcrumbs
 2 eggs, beaten
 1 tsp salt
 Avocado oil

Cook quinoa according to package directions.

Steam cauliflower until fork-tender.

In a large mixing bowl, add quinoa, cauliflower rice, cheese, breadcrumbs, eggs. and salt. Mix well.

Add breadcrumbs, eggs. and spices to the bowl and mix well.

Heat a large non-stick skillet on medium flame. Add avocado oil. Roll the batter into balls and in batches, fry the tots on all sides until golden. Store on a paper towel-lined plate and repeat process with the remainder of the batter. Enjoy!

    1. Yes! You can bake these (or even air fry them) but the flavor is definitely not as delicious as when it’s fried. Baking is definitely a healthier option though!

    1. Hi! Yes these can be frozen. To heat up again, thaw in the refrigerator for 24 hours, and then reheat on the stovetop (for best results) or in the oven.
