2cupsshredded zucchini (or one very large zucchini)
2eggs
1cupshredded cheddar cheese
½cupoats, ground into flour in the blender/food processor
1 ½tspveggie blend seasoning
½tspfine salt

In a large bowl, combine all ingredients and mix well.

Heat a large skillet on medium-low flame. Add avocado oil and fry up little batches of the batter. Place on a paper towel lined plate and repeat process until entire batter is cooked. Enjoy!
