Campfire Smore’s Donut Sandwiches

☀️ It ain’t summer til you’ve had some s’mores, but since it’s been a steady 90 degrees over here, we passed on the firepit and leveled up our s’mores game with @nelliesfreerange stuffed donuts!
⭐️ What’s in our s’mores donut you ask??

 1 clean cake mix
 3 Eggs
 1/3 cup Coconut Oil
 1/3 cup Water
 1 Tbsp Pure Vanilla Extract
 2 cup Baking Chocolate Chips
 Mini Vegan Marshmallows
 3 Graham Crackers

Preheat oven to 325F.

Whisk eggs, oil, water, and vanilla extract together in a large bowl.

Add cupcake mix and whisk until well blended.

Spoon batter evenly into the donut pan.

Bake 18-20 minutes, or until a toothpick comes out clean when inserted. Set aside to cool.

Melt chocolate with coconut oil.

Take your graham crackers and crush them with your hands, a food processor, or a rolling pin.

Once cooled, cut your donuts in half. Dip the top of the donuts into the melted chocolate, sprinkle with graham cracker crumbs, and set aside on parchment paper.

Arrange the bottom halves of the donut on a parchment paper lined baking tray. Place mini marshmallows on each donut bottom. Place in the oven on broil for 1 minute, watching closely that the marshmallows don't burn but become golden instead.

Remove donut bottoms from the oven and assemble with the tops. Enjoy!
