What’s in our lunchbox??
✏️ Pencil waffle sandwiches (using peanut butter as the spread). If not going the themed route, we just send in waffles without shaping them.
🐛 Hungry caterpillar apples (our kids dip the fruit into peanut butter)
🔥 S’mores energy bites (using almond butter as the base)… these are no-bake and store in the freezer as an easy grab and go make-ahead snack

Take your waffles and cut into rectangular shapes. Cut your whole wheat toast into mini triangles. Add a strawberry slice at the top to resemble an eraser. Using a piping pen, add some chocolate to the tip of the triangular piece of bread.
Shape your green apple slices into the body of a caterpillar. Cut off the stem of your strawberry and add it to the right of the apple slices to resemble a face. We also added a face pick to our strawberry. Surround with blueberries.
Into a blender, pulse the graham crackers, oats, almond butter, pure maple syrup, vanilla and salt together until the mixture is sticky.
** If not using a blender, then add all ingredients together in a large ball and mix well.
Add in the chocolate chips and mini marshmallows and mix together.
Using your hands, shape into balls. Store in the fridge or freezer and enjoy!
