Overnight Strawberry Peanut-Butter Oats with a Hint of Coconut


The other night my friend Jessica, one of Liv’s best friend’s moms, texted me asking if livlaughcook had any great overnight oats recipes. She’s a radiologist in an ER and works night shifts, so she needed something healthy to eat at midnight for her breakfast/lunch/dinner/whatever meal that time constitutes. Truthfully, I’ve never had overnight oats before so I told her to give me a day or two to test some flavors out and get back to her.

The result is my Overnight Strawberry Peanut-Butter Oats with a Hint of Coconut. I texted her pictures and in return she said she was actually looking for something healthy. The best part about this recipe is that even though it looks completely decadent and tastes creamy and indulgent, it’s actually packed with nutrients, good fats, and IS healthy!

We start off with One Degree Organics sprouted oats. Because these oats are sprouted, they are more nutritious than regular whole grains and are richer in protein, folate, and vitamins C and K. I love this brand specifically because they’d glyphosate-free which is pretty difficult to find these days. That’s the nasty chemical that was found in the carcinogen weed killer Roundup and is found is so many of our foods such as Cheerios, Tropicana Orange Juice, and Nature Valley Bars. Next on our list are the chia seeds which are high in fiber, protein, omega-3s, and antioxidants. They’re also extremely fun to pop in your mouth… is that just me?? 🤷🏻‍♀️

Our topping, the most deceivingly fattening part of the entire parfait is actually just cacao nibs, which are a great source of fiber, iron, antioxidants, and magnesium. They add a delicious crunch without the guilt of chocolate chips. This is then sprinkled with flaxseeds that are rich in fiber, omega-3s, and can help digestive health.

These nutrient-rich overnight oats resemble peanut butter pie mixed with a bit of strawberries and cream, mixed with a taste of coconut. What’s not to love? 🤤

 ½ cup sprouted rolled oats (we used One Degree Organics)
 ½ cup unsweetened oat milk (we used Califia Farms from Whole Foods)
 ½ cup coconut milk yogurt (we use Co Yo Natural Coconut Yogurt Alternative from Whole Foods)
 Diced strawberries
 2 tbsp organic peanut butter
 1 tbsp chia seeds (we used Trader Joe’s organic)
 ½ tbsp cinnamon
 1 tsp vanilla extract
 Optional: sprinkle of organic brown coconut sugar (we use Big Tree Farms organic which is unrefined and low glycemic)
Topping
 Sprinkle of cacao nibs (we use Navitas organics)
 Sprinkle of ground flaxseed (we use Spectrum essentials organic)

Pour oats into a mason jar and cover with milk. Add in the rest of the ingredients (except for the topping which will be added the next day).

Stir to combine all ingredients so they're evenly dispersed and seal the jar with a lid. Store in the refrigerator overnight.

When ready to eat, sprinkle the top of the oat mixture with both the cacao nibs and flaxseed (you can also add extra strawberries if desired)

  1. Hi! We buy our Co Yo Natural Coconut Yogurt Alternative from Whole Foods. They also come in other flavors but those have added sugars so I stick with the Natural flavor. The yogurt also contains probiotics and doesn’t have any gums or emulsifiers like other coconut yogurts.
